There will be days where you'd feel super duper healthy and you want something with minimal preservatives in your food. We found one way - which is to have a simple base. In this instance, some homemade coconut yoghurt!

Easy Peasy Coconut Yogurt

Why make your own yogurt?

I've always believed in trying to make most things from scratch and when I found that I could make my own yogurt, I rejoiced! Heck yeah! Especially ever since I turned #plantbased, it's so hard to find yogurt available on the supermarket shelves. There's also many reasons why I would choose to give this a go because you get the choice of adding fresh ingredients to your yogurt! So I decided to have a go at making my own yogurt. It's incredibly easy and you can create your very own concoction of yogurt.

This is a recipe that I had to tweak a bit because we've tried with other brands of coconut milk, etc. It's important to just try to make a small batch first to give it a go instead of making a bulk and throw it away if it does not work out. Remember, whatever that you're trying to whip up, make sure you try with a test batch first. It's really simple, all you have to do is let the probiotics do the work for you!

EASY PEASY COCONUT YOGURT

PREP TIME - 5 minutes

TOTAL TIME - 24-48 hrs

STORAGE TIME - 3 days or more (ours kept for 7 days)

Ingredients

  • 2 x 200ml full fat coconut milk* (organic when possible or light for thinner yogurt*)

  • 2 capsules probiotic* (Check out Notes for more info)

Instructions

  1. Before attempting to make your yogurt, ensure you have a clean, sterilised, dry glass jar | preferably something that has a lid - find out why on Step 6. Here's some tips on how you can sterilise your glass jar before using them. Just remember to make sure they're in room temperature before using them.

  2. Give your coconut milk a good shake or if the coconut milk is separated, give it a good mix with a whisk or a wooden spoon. | Not to use metal spoon/whisk.

  3. Split open the probiotic capsule and pour it into your yogurt. | Remember to use plastic or wooden spoon.

  4. Cover the mixture with a very thin, clean dish towel - something that lets the mixture breathe but keeps bugs out) and secure with a rubber band.

  5. Let the mixture do its magic for at least 24 hours and up to 48 hours in a warm place. The longer it rests, the tangier the yogurt will become. | It'll taste a tad like greek yogurt not your usually sweeten yogurt you find in the supermarket. I left it for a full 48hrs but it's totes up to you to decide on whether you'd have 2 batches - 1 batch for 24 hrs & the other batch for 48 hrs to see if there's a difference on texture, taste, etc.

  6. Voila! Before I decide to put it in the refrigerator, I give it a quick stir to check out the consistency and thickness. | Remember to use plastic or wooden spoon. If it's good for you, secure the jar with a lid and refrigerate until cold. Refrigerating will also thicken the yogurt even more!

  7. It's always the best thing in the world when you have a blank canvas(in this instance a plain yogurt) for you to whip up anything you'd like. Check out our Vanilla Matcha and Mango Yogurt

  8. You can keep for several days, covered in the refrigerator. | Remember to use plastic or wooden spoon, always use a dry & clean spoon so it can last longer. You'll know it's gone bad when the smell is off or strange things starts to grow on it. Your senses are the best judgements whether it's still edible.

*NOTES
