VANILLA MATCHA AND MANGO YOGURT (PROTEIN PACKED!)

In our last recipe, we made some coconut yogurt
Something simple that you can whizz it in your blender before of after your morning routine or for breakfast to go.
Before you scroll down for the recipe, I'd like to share with you a bit on "Ugly Ingredients". Everyone by now has many different interpretation of what it is! Let's not complicate things and get down to it, to me it simply means perishable items or ingredients like fruits, vegetables, etc. For a long time now, I've always believed in salvaging as much of an ingredient as much as I can. Here's an example of what I shared with the folks at SG Food Rescue about mushrooms!
My take is this - a farmer somewhere far away is working their butts off because this is their livelihood/bread and butter yet here we are wasting and throwing away food that is still edible or that still could be used for something else. So think about the next fruit, vegetable or whatever that is on your plate and think about what it has gone through to be on your plate right now!
Whew! Now for the recipe, since we're on the topic of rescued ingredients, I've used a rescued mango to make my yogurt using the base of my coconut yogurt.
Simple tips for rescued ingredients would be to -
Cut them into small cubes | Before you freeze them, remember to cut them into smaller cubes - trust me it'll help when you want to blend those frozen fruits yet not worry about damaging your blender's blade or some people will just place the whole fruit in which will be such a bugger when it's time you want to use it, you'll have to wait for it to defrost then cut it. (Totes defeat the purpose of having a frozen, cool smoothie or yogurt.)
Place them in an airtight container or re-used those plastic containers
Freeze them
Or if you prefer to just place them in the refrigerator, you can do so too!

VANILLA MATCHA AND MANGO YOGURT
PREP TIME - 5 minutes
TOTAL TIME - 5 mins
STORAGE TIME - Eat immediately
Ingredients
1 tsp Chia Seeds*
1/2 cup Mango*
1 tsp Pine nuts*

4 tbsp Homemade Coconut Yogurt

Instructions
In a blender, put a few spoonfuls of yogurt. | Remember to use plastic or wooden spoon.
Add on the rest of the ingredients to blend.
Pour it out to a cup, scrapping all the excess (go ahead and use your fingers, nothing should go to waste.)
Sprinkle some pine nuts and chia seeds or whatever else that you want to add on.
Voila! Dig in!
*NOTES
It's super simple when you've got a plain yogurt base and you can mix in whatever you feel like.
